Avocado and lime yoghurt toast with chilli

Yes, another recipe for avocado on toast, but I mean, c’mon – it is SO good! I get that there are millions of pictures of avocado on toast all over your social media networks, but I still end up liking all of them because I love avocados so much. I think I could actually eat this breakfast every single day for the rest of my life, it’s just too tempting. Plus it’s a fun variation on your basic avo on toast.
2 slices of bread (whatever kind you like – spelt, rye, gluten free)
A good scoop of coconut or soya yogurt
Zest and juice of 1 lime
1 teaspoon chilli flakes (red pepper flakes)
Sea salt and freshly ground black pepper
Toast the bread while you slice open the avocado lengthways and remove the stone. Score the avocado length and crossways, then scoop out the flesh with a spoon. Divide the avocado between the two pieces of toast and gently mash the flesh into the toast. Season with salt and pepper.
Place the yogurt in a bowl, squeeze in the lime juice and stir in the lime zest. Season with salt and pepper and mix to combine. Top each piece of avocado toast with the yogurt and sprinkle with the chilli flakes.
